The useful home setup
A decent external suction sealer, a roll sized to the machine and a marker/date system is enough for most home sous-vide cooking. Pulse mode is helpful for delicate foods and wetter marinades.
For liquids
External suction machines can pull liquids toward the seal bar. Chill or partially freeze liquid-rich foods, keep the machine elevated relative to the bag where appropriate, or use displacement in a suitable zip bag. A chamber machine is the cleaner solution for frequent liquid sealing.
Bag choice matters
Use bags explicitly intended for vacuum sealing and suitable for the cooking temperatures you plan to use. Do not assume every storage bag is appropriate for heated immersion cooking.
FAQ
Can any plastic bag be vacuum sealed?
No. External suction sealers usually need embossed/channel bags. Follow the machine and bag manufacturer instructions.
Does vacuum sealing make food shelf-stable?
No. Vacuum sealing changes the atmosphere around food but does not sterilise it. Refrigeration, freezing and food-safety rules still apply.
